Banana and Walnut Muffins


Tajuk tuh ada walnut..tapi saya tak letak pun sebab tak ada stok..cuma ada chocolate chips...so ganti la dengan choc chips...ehh saya tak tau rasa sedap ke dak muffins neh...sebab saya langsung tak rasa pun...saya buatkan untuk my ex school mate dan anak yang nak balik ke asrama Ahad baru neh..

Saya singgah di rumah Puan Ramlah Othman~my ex-schoolmate tuh kan~ on the way ke Manjung nak hantar anak...sempat la menikmati LaksaMi Pantai Remis yang sedapppp sehingga menambah2 kami anak beranak...hahaha...tak segan langsung kan...Terimakasih Lah...nanti aku gi hantar anak lagi...hang buat LaksaMi neh lagi yerr,mesti aku singgah rumah hang hahaha..sedapp sehingga menjilat sudu...
Tapi menurut Puan Ramlah...muffins adalah sedap...hahaha...Resepi saya ambil disini..senang je nak membuatnya...ok jom check resepi..


Ingredients 
3 ripe Bananas
1/4 cup of oil or oleo (I used sunflower oil) > used corn oil
3/4 cup brown sugar
2 cup flour
1 cup chopped walnut < subs with choc chips
2 tsp baking powder
1 tsp salt
1 egg (lightly beaten)
1/4 cup milk (optional)< used whip cream

Method
1. Pre-heat oven at 350 degree Fahrenheit (or 170 degree Celsius) for about 10 mins.
2. Mash the bananas.
3. Sieve flour, baking powder and salt in a mixing bowl. Add oil and sugar into the mixing bowl. Stir and mix them well.
4. Add the mashed banana. Use spatula and gently fold them.
5. Pour in egg, milk and add walnut. Stir well and do not beat.
6. Spoon the batter into the paper cup about two-third full each.

7. Bake at 400 degree Fahrenheit or 200 degree Celsius for about 20 mins until the muffins turn brown or the toothpick comes out clean.

Vanilla Peach Muffins


Dah banyak hari saya beli peaches neh...tak ada siapa yang nak makan..dari dia rotten ..baek la saya buat muffins...kebetulan masa BW...nampak la resepi neh kat blog kak paty...apa lagi..terus la CnP...pagi tadi baru berkesempatan nak buat...

Atas tuh saya tabur badam cincang instead of coarse sugar...to Kak Paty...tq for the recipe...

Ingredients:-
1 ¾ cup all purpose flour
1 ½ tsp baking powder
½ tsp salt
2 large eggs
¾ cup sugar
2 tbsp vegetable oil
2 tsp vanilla extract*
1 ½ cups peeled, diced frozen peaches (unthawed)> used fresh peaches
coarse sugar, for topping > subs with almond nibs

 Method:-
Preheat oven to 350F and line a 12-cup muffin tin with baking cups.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, whisk/beat together eggs and sugar for about a minute at high speed, just until fairly smooth, then add in oil and vanilla.
Add in flour mixture and stir until just combined.
Briefly stir in peach pieces.
Divide evenly into muffin cups and sprinkle with coarse sugar.
Bake at 350F for 18-22 minutes, until a tester inserted into the center comes out clean. Cool on a wire rack.

Sempena tahun baru yang molia ini..mari la kita update blog yang dah lama sejuk beku...kalau takat suam2 kuku...gagah la lagi kan...neh dah kategori beku..kena la kasi cair sikit...

Neh chocolate chips muffins sbnrnya resepi nigella chocolate chips...tapi saja la letak strawberry nk kasi sedap sket...ala x letak pn mmg dah sedap...

Nak resepi boleh kesini.. (ader lagi tuh ceciri kemalasan...)

Nigella's Chocolate Chips Muffins


Saya dan lama tak buat muffins neh...First time buat Nigella's Chocolate Chips Muffins neh masa adik saya yang bongsu kawen pada tahun 2009..masa tuh memang mencari2 la resepi muffins yang mudah sebagai goodies untuk tetamu...salah satu dari muffins saya buat yang neh laa...saya buat dalam 300 biji...lengoh habis satu badan...hahaha...pembantu masa tuh pun cuma adik ipar dan anak buah serta anak sendiri...tapi budak2 neh pun time awal tuh bersemangat la...tolong masukkan semua muffins dalam goody bags...last2 tinggal saya dengan adik ipar sahaja...sampai lewat malam la nak menyiapkannya.

Kemudian memang saya terus la guna resepi neh...sebab memang sangat mudah dan confirmed jadi...baru2 neh terasa nak buat semula ...sebab tengok ramai plak la yg buat...hahaha..selama neh dah lupa kat muffins neh...

Ingredients:-


1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons best quality cocoa powder
3/4 cup caster (super fine) sugar
pinch of salt
3/4 cup semisweet chocolate chips
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract
extra 1/4 cup semisweet chocolate chips, for sprinkling

Method:-

Preheat oven to 400° F.  Line standard muffin tin with paper liners or lightly grease with cooking spray.
In a large bowl, whisk together the dry ingredients, flour, baking powder, baking soda, cocoa, sugar and salt.  Stir in 3/4 cup chocolate chips.
Pour all the liquid ingredients, milk, vegetable oil, and egg, into a 2-cup measuring jug.  Using a fork, mix to combine.
Using a spatula, mix the wet and dry ingredients together.  Do not over-mix, a lumpy batter makes the best muffins.
Divide batter evenly among muffin cups.  Using the remaining 1/4-cup chocolate chips, sprinkle each muffin with a few chips.
Bake for 18 to 20 minutes or until the muffins are dark, risen and springy and a cake tester inserted into centre comes out clean.

Banana & Chocolate Muffins

 
Dalam usaha nak memperabehkan stok pisang yang melambak2 kat rumah neh....dalam freezer ada 2 bekas lagi tuh....pasneh saksikan la menu2 yang berasaskan pisang yer...hahaha...kek pisang, roti pisang, donat pisang ( tengok kat blog Tun ada donat pisang hari neh)

Neh sebenarnya saya buat semalam...tak sempat nak update blog...so hari neh boh la sebab hari neh tak ada masak apa2 lagi...out station...skrg lunch break..bleh la update blog dan BW sat...

Resepi neh saya dh pernah try...sedap dan senang...ambil dari happyhomebaking jugak...


Ingredients:

275g plain flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, about 450g
100g brown sugar (original recipe calls for 125g brown caster sugar)
1 large egg, lightly beaten
50ml semi-skimmed milk (I used low fat fresh milk)
75g unsalted butter, melted and cooled
50g chocolate chips

Method:
Pre-heat oven to 180degC (350 degF). Line muffin pans with paper muffin cases.
Sieve together flour, baking powder, baking soda and salt into a mixing bowl. Mix in the chocolate chips. Set aside.
Peel the bananas and mash with a fork in a bowl. Add in brown sugar, egg, milk and melted butter. Mix until well combined.
Pour the liquid mixture into the dry ingredients. With a wooden spoon or a spatula, gently fold all the ingredients to form a wet batter. Stir gently, using only a few strokes and mix until the flour are incorporate into the batter. DO NOT Over mix. The batter should appear lumpy.
Spoon batter into paper muffin cases. Bake for 20mins until muffins turn golden brown or a toothpick inserted into the centre comes out clean.
Let cool on a wire rack. Serve warm or cold.

Banana Muffins with White Chocolate


....sepatutnya laa dengan white chocolate sahaja..tapi saja la saya neh pi tambah2 dengan dark chocolate chips plak kan...nak kasi meriah sikit...resepi dari joyofbaking..

Hari Sabtu balik kampung...dan semalam balik sini semula...seperti biasa ayah akan bekalkan pisang yang ditanamnya itu...berlambak2 sampai tadak sapa nak makan...dekat jiran2 pun dah jenuh bagi...semalam bawak balik pisang rastali dan pisang abu(kebatu)...pisang abu tuh boleh la digoreng esok ke lusa ke...

Meh tengok resepi...

Ingredients: 


1 3/4 cups (225 grams) all purpose flour
1/2 cup (100 grams) white granulated sugar
1/4 cup (55 grams) light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (2 ounces) (65 grams) white chocolate chips or chunks
3 large ripe bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)
1/2 cup (113 grams) unsalted butter, melted and cooled
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract


Method:-

Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Either line 12 muffin cups with paper liners, or you can butter or spray them with a non stick vegetable spray.

In a large bowl combine the flour, sugars, baking powder, baking soda, salt, and white chocolate chips.

In a medium-sized bowl combine the mashed bananas, melted butter, eggs, and vanilla. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. Over mixing the batter will yield tough, rubbery muffins.)


Spoon the batter into the prepared muffin tins. Bake about 20 -25 minutesor until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature
*saya guna gula perang sahaja sebanyak 110gm
* saya dapat 23 muffins bersaiz seperti gambar diatas...

Banana Cake Muffins

Seriously la tak ingat mana ambek resepi neh...selalu ader je save sekali dengan linknya...tapi entah kali neh tatau plak nape tak de link tuh..

Kalau puan empunya resepi terbaca neh harap leh bagitau saya supaya saya boleh kreditkan disini..
Muffin neh sedap...bertambah2 sedap bila saya letak blueberry filling ditengah2 muffin tuh....kemudian tabur2 je almonds atas muffins tuh...tapi terlupa la plak nak snap pic muffin yang terbelah....


Wet Ingredients:
1 egg
75g sugar
1 tbs condensed milk (or maple syrup)
1 tbs milk (or cream / yoghurt / sour cream)
1 tsp vanilla
1/2 tsp cinnamon
90ml oil
1 banana


the dry ingredients:
125g flour
1/2 tsp baking powder
1/2 tsp baking soda

1 - Beat egg and sugar till light and creamy. (I just used a balloon whisk, but you can use a mixer if you're in the mood for more washing.)

2 - Add the rest of the wet stuff and mix well.

3 - Combine dry stuff and sift into wet stuff. Fold gently with balloon whisk till just moistened.

4 - Pour into baking pan. Bake at 160 degC for about 20 min, or until a skewer inserted in the middle comes out clean.

Cranberry Chocolate Chips Scones


Dah lama teringin nak makan scones...pernah dulu buat sekali...lamaaa sangat dah..sampai dah lupa macamana rasa dia...kali neh ingat tak nak la buat yang plain..nak letak something dalam scones tuh..so browsed beberapa sites jumpa la satu resepi yang tak banyak sangat adunan dia..ada tuh sampai 6 cwn tepung..haaa..tak kuasa nak bahagi2...yang neh sesuai la...tak banyak mana...cukup makan satu family...tuh ada sikit lagi balance pas breakfast tadi, saya simpan dalam bekas kedap udara...leh makan untuk minum petang neh..

Saya dapat resepi dari allrecipe. Actually dia tak ada letak chocolate chips pun...just cranberry sahaja, tapi dia guna fresh cranberry, saya cuma ada dried je...biasala saya neh suka menokok tambah...yang lain-lain semua sama sahaja..oooo lagi satu buttermilk tuh saya tak letak habis...sebab saya tuang sikit2...so bila adunan dan lembut saya stop masukkan buttermilk tuh..nanti lembek sangat susah la nak handle.

Makan panas2 dengan butter dan jem sangat la sedappp....

Ingredients:-
·         2 1/2 cups all-purpose flour
·         2/3 cup sugar
·         2 1/2 teaspoons baking powder
·         1/2 teaspoon baking soda
·         3/4 cup butter (no substitutes)
·     1 cup chopped fresh or frozen cranberries> saya ltk 1/2cup cranberries & 1/2 cup choc chips
·         3/4 cup buttermilk> saya tak guna kesemuanya

Directions:-
In a mixing bowl combine the dry ingredients. Cut in butter until mixture resembles coarse crumbs. Add cranberries. Stir in buttermilk just until moistened. Turn onto a lightly floured surface; gently knead 6-8 times. Divide in half. Pat each into an 8-in. circle. Cut into eight wedges. Place 1 in. apart on ungreased baking sheets. Bake at 400 degrees F for 15-18 minutes or until lightly browned. Remove from pans to wire racks.

Banana Cranberry Muffin

27th April

 Selepas buat asam rebus tuh saya proceed buat muffin neh...actually i bought the cranberries a week before....hajat tuh nak buat cranberry almond bread...tapi tak terbuat pun..sebab sebuk dok menguli bread lain yang penuh dalam list tuh...

Muffin sangat sedap..maklum la pisang kan...campur plak dengan cranberries yang masam2 manis tuh...huhh...sedapp....

Bahan-bahan:-

1 cwn pisang yang telah dilenyek
1/2 cwn gula perang
2 cwn tepung
1sdb baking powder
1/2 sdt soda bikarbonat
1 biji telur
1/2 cwn minyak sayur
1sdt esen vanila
1 cwn cranberries (direndam terlebih dahulu sehingga kembang)
badam atau apa2 kekacang > saya letak kuaci labu

Cara-cara:-
Ayak tepung bersama baking powder dan soda bikarbonat dalam satu mangkuk
Dalam mangkuk yang lain, pukul telur, masukkan gula, pisang, esen vanila, cranberries dan minyak sayur
Campurkan bahan cecair kedalam bahan kering. kacau perlahan-lahan..tak perlu campur adunan beria sangat.
Sudukan kedalam mangkuk muffin dan tabur dengan kekacang yang disukai.
Bakar selama 20 minit dengan suhu 180C

Banana Chocolate Muffins


Last but not least for today…is.. muffin pisang bercoklat..neh buat sesiap utk minum ptg nanti…kot nak makan as a dessert pun boleh je..
Resepi dari Hana..

Bahan-bahan:-
  • *170g tepung gandum.
  • *30g serbuk koko
  • *130g gula.
  • *1 sudu kecil baking powder
  • *secubit garam
  • *100g coklat bar (coklat masakan) - patah2kan jadi kecil-kecil> saya guna choc chips
  • >2 biji telur
  • >75ml minyak masak
  • >100ml susu segar
  • >sedikit vanila esen
  • >2 biji pisang
Cara-cara:-
  1. Panaskan oven sehingga 170C.
  2. Masukkan semua bahan-bahan yang bertanda (*) ke dalam FP. Kisar sehingga sekata. (If coklat tak hancur sangat pun takpe.. jadi ketul2 kecil dah ok)
  3. Kemudian masukkan bahan yg bertanda (>) ke dalam FP. Kisar sehingga sebati
Cedukkan ke dalam cup muffin. Bakar selama 25 minit atau sehingga masak

*Saya tak guna FP, buat manually guna whisker sahaja..

Oat and Orang Muffins with Cream Cheese dan Raspberry Jam Filling


Panjang la plak nama muffin neh....
Oleh kerana saya selalu buat muffins..so nak reka resepi sendiri mmg tak susah la…lagipun muffin la yang paling senang nak dibuat berbanding dengan yang lain...saya suka letak mcm2 dalam muffin supaya tak bosan bila makan..hahaha…makan pn nak bosan ke…sebab tuh saya suka letak inti apa2 dalam muffin..sesiapa nk cuba dibawah neh ada resepi…



Bahan-bahan:-

200gm tepung gandum
40gm oats
100gm serbuk badam
2sdt baking powder
130gm gula castor
2 biji telur
260ml susu segar + 2sdb oren sunquick
80ml mentega cair
1sdt esen vanilla

Inti/Filling:- (di kacau sebati kecuali jem)
150gm cream cheese
½ biji telur
3sdb gula aising
Jem raspberry secukupnya

Cara:-

Panaskan oven 180C.
Satukan tepung, baking powder, badam  dan gula dalam satu bekas
Dalam mangkuk yang lain, pukul telur bersama esen vanilla dan campurkan susu. Kacau sebati.
Tuangkan cecair kedalam mangkuk bahan2 kering..kacau sekejap..tak payah nak beria sebati tuh..ada ketul2 tepung pun biar je..
Sediakan bekas muffin..sudukan adunan, letak sedikit adunan cream cheese dan satu sudu kecil jam..pastu tutup semula dgn adunan tepung..
Bakar 20min atau sehingga masak..

Chocolate Chips Muffins


Kalau buat chocolate chips muffins memang guna resepi neh..mesti jadi punya…dah la tuh sedap pulak kan…korang translate la sendiri yer…

Ingredients:

250g plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate soda
2 tablespoons best quality cocoa
175g caster sugar
150g chocolate chips (plus more for sprinkling later)
250ml milk
90ml vegetable oil
1 large egg
1 teaspoon real vanilla extract

How to make:
Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases.
Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug.
Mix both together. It will be a runny batter - then spoon into waiting muffin cases.

Strawberry Cheesecake muffins

Muffins neh sangat sedap sebab selain daripada ada blueberry filling...ada cream cheese jugak...tuh yang buat sedap kot..resepi asal guna buat strawberry..memandangkan tak ada stok strawberry, so ganti la dengan blueberry filling..korang boleh je nak bubuh apa filling pun..janji sodappp...Actually dah lama resepi neh sampai tatau la ambek dari mana, tapi berdasarkan kepada image yang berserta dengan resepi tuh..tertera watermark Baking Cakes Galore. Agaknya tuh la tuan punya resepi...



Neh resepinya..tq kepada empunya resepi...

Ingredients
350g (12 oz) plain flour
1½ tbsp baking powder
150g (5 oz) caster sugar
½ tsp salt
2 eggs
250ml (9 fl oz) milk
75g (3 oz) butter, melted
For The Filling
175g (6 oz) soft cheese + ½ egg (saya guna cream cheese Kraft)
3 tbsp caster sugar
6 small strawberries, halved (saya guna blueberry filling)

Method

Preheat the oven to 200°C/fan oven 180°C/400°F/gas Mark 6.

Sift the flour and baking powder into a large bowl, add the sugar and salt and mix through with a wooden spoon or whisk then leave aside.

In another bowl beat the eggs and milk together, and then stir in the melted butter. Make a well in the dry ingredients and pour in the liquid ingredients, now gently mix, it is quite normal to have a few lumps remaining in the mixture. Do not over mix or the muffins will not be light and airy. Mix the cream cheese and sugar for the filling together in a small bowl. Half fill the muffin cases with the muffin mixture, and then push half a strawberry into each muffin case. Place a teaspoonful of the sweet cream cheese on top, and then finish by spooning over the remaining muffin mixture to cover and fill each muffin case.
Bake in the preheated oven for 15 -20 minutes until well risen and golden on top. Leave to cool for 5 minutes before turning out on a wire rack to finish cooling.
