Chilli Crab With Dried Shrimps in Thai Style


Tengok dalam fridge ada  crab..so hari neh buat masak ketam la yer..selalu buat masak lemak cili api..so hari neh nak buat la masak lain pula...belek2 buku resepi terjumpa la resepi neh..chinese cooking...ada guna wine...tapi kita omit la kan..ganti dgn cuka je...

Sedap dan ringkas resepi neh...memang tak perlu banyak bahan...mujur la semua ada kat umah neh...yerla nama pun simple kan...

Ok jom tengok resepi..dari My Special Menu~Fish, Prawn and Crab> Chef Hoe Yee/Chef Josten Tan

Ingredients (A):-
2 crabs (cut into pieces)
3tbsp dried shrimps (soaked, drain well)
1 onion(chopped)
1tbsp chopped garlic
1tbsp chopped shallots
1tbsp chopped ginger

Ingredients (B):-
20 dried chillies (soaked in 200ml hot water, then pounded)

Seasoning:-
2tbsp oyster sauce
1tbsp light soy sauce
2tbsp shaoxing wine (omit> replace with vinegar)
2tbsp chilli sauce
1/2 water 

Method:-
1. Deep-fry crab pieces in the hot oil until golden in colour, remove and drain well. Keep aside
2. Leave 5tbsp oil in the hot wok, saute dried shrimps, big onions, shallots and ginger over a medium heat until fragrant
3. Add in the pounded chillies, water and seasoning, bring to boil. 
4. Add crab pieces, stirring constantly until the sauce is thicken and well combine. Dish up and serve hot.
